Pineapple is a tropical and subtropical fruit that is grown in warm climates around the world.  The meat is juicy with sweet and tart flavors complementing one another perfectly.

Pineapple is found in many varieties.  Smooth Cayenne makes up about 90% of all traded pineapple.  Champaka, a variety of Smooth Cayenne, is the common pineapple that is seen in stores.  The newest type, Gold pineapple, is smaller and much sweeter than most other varieties.  Some different common varieties are Queen, Spanish, Red Spanish, and Pernambuco.

The acidity of pineapple is greatly affected by the geographic location where it is grown.  The Smooth Cayenne pineapple, grown in Hawaii, has much higher acidity than that grown in Thailand and much of Central America.  Thailand is the world market leader for pineapple and continues to set the standard.
